Anything you can think of we can make it into a cake. And today I will be talking to you about cake decorating. Marshmallow fondant we make in the store is thirty two ounces of marshmallows, powdered sugar fifteen cups sifted, and we also have our special ingredient gum tragacanth which is a plant based gum that when added to the fondant it gives it more elasticity and more bend. So we want to start by adding half of the sugar, seven and a half cups. And you don’t have to be terribly exact with the measuring of the powdered sugar. You may need more sugar on more humid days and maybe some more water on drier days. You also want to sift in three quarters, you don’t need to have the gum tragacanth powder. The fondant will work perfectly fine. We just find that it gives us more elasticity when making decorations. Half your sugar, and then you want to add your melted marshmallows. So you want three bags, we use mini marshmallows. We find that they melt a little bit better than the big ones. Half a cup of water, you can microwave them and they’ll go into our big bowl. So once you have your marshmallows melted give them a good stir. Make sure there’s no remaining lumps. They go over your sugar. We’re using our twenty …
What’s the difference between bittersweet chocolate and semisweet chocolate? Can I use Dutch cocoa in all my recipes calling for cocoa? Understanding the difference in chocolate and how they are used is essential to baking. In this guide, we’ll identify the characteristics of those chocolates used in baking.
Cocoa is the dry chocolate powder derived from chocolate liquor. It comes in two types: natural and Dutch process. Dutch processed cocoa is processed with an alkaline. It is slightly darker, smoother, and more easily dissolved than natural cocoa. In many recipes, natural cocoa and Dutch cocoa are not interchangeable. Natural cocoa is slightly acidic and will therefore chemically react with baking soda to create carbon dioxide bubbles and some leavening power. Be sure to check your recipe, if you have an old hand written recipe, we recommend printing out a new typed version of it on your inkjet printer. Save on your ink by using a 4inkjets coupon too. Dutch cocoa is slightly alkaline, will not react with baking soda, and must rely on baking powder for leavening.
Bitter (unsweetened) baking chocolate is made from pure chocolate liquor. By specification, it must contain 50 to 58 percent cocoa butter though with inferior products, vegetable oil may he added. Depending on the producer, milk solids, vanilla, or salt may be added. I have a package in front of me that contains only chocolate and milk solids. Unsweetened chocolate has a bitter taste and relies on sweeteners in the recipe to make it palatable.
Sweet baking chocolate–bittersweet, semisweet chocolate–has sugar added. These products must contain 35 to 50% cocoa butter but may have as little as 15% chocolate liquor. Because unsweetened chocolate has twice the chocolate liquor, we prefer to use unsweetened chocolate in most of our baking.
Bittersweet and semisweet chocolate can be used interchangeably in recipes though there is a difference in flavor. Often, bittersweet is a more expensive chocolate and to many, a better, richer-flavored chocolate.
Milk chocolate is made with ten percent chocolate liquor. It contains a minimum of twelve percent milk solids. Because it has such a low percentage of chocolate liquor, rarely is it melted and added to batter or dough.
White chocolate contains no chocolate liquor but is made with cocoa butter. Historically, the FDA has not regulated the manufacture of white chocolate so you need to read labels carefully. If the product was made with vegetable oil instead of cocoa butter, it will not perform the same as a product with cocoa butter.
Chocolate chips are made with chocolate liquor with only minimal amounts of cocoa butter. Instead, they are made with vegetable oil and stabilizers to help them hold their shape. Without the cocoa butter, chocolate chips have a different taste and mouth feel. Chocolate chips will have a firmer set in puddings, pie fillings, and sauces than baking chocolate. Chocolate chips can be purchased in milk chocolate and semi-sweet chocolate.

If you want to become a master at cake decorating, you will need training and practice. Once you have mastered cake decorating you could become famous in the cake making industry. If you are a creative person you could go far when it comes to cake decorating.
Even a person who is new to cake decorating you want your cake to look beautiful. My mother just made a cake and frosted it, she may have added sprinkles, and she wrote a happy birthday message with icing. Those were our cakes, they may not have been well decorated, but they were tasty. This article will give you ideas and tips to make your cake look much better than Mom used to make.
When you make the cake, be sure that the batter is level in the pan before you place it in the oven. Check the cake at 20 minute intervals to make sure the cake is baking evenly, if you find one side of the cake is higher than the other, you should turn the pan around so it will rise evenly. If you find that your cake baked with one side higher, use a knife to even it. You should do this while the cake is warm.
The cake should be cooled for at least a day before you even think about starting any cake decorating. The outside of the cake could feel cool, but the middle of the cake may stay warm for hours. Frosting the cake before it is completely cool can ruin your decorating.
After the cake has cooled, turn it upside down on a cake board, you will have less crumbs this way. To avoid crumbs all together put a thin layer of icing on the cake. Once you have covered the cake with a thin layer of frosting, you can cover that layer with a normal layer of icing. Make sure the icing is smooth and even. You can dip your metal icing spatula in cold water and go over the icing, this will smooth the icing beautifully.
Icing is the most important ingredient in cake decorating. The icing should be quite stiff, if it is too stiff to work with you can always thin it out. When you are making the frosting, make a good amount. You will need it for other decorations on the cake. Make sure you have plenty of food coloring, as you will need it to color the icing for different cake decorations.
When you are ready to start decorating your cake you will need a few pieces of equipment. You will need more than one pastry bag, and the icing tips you will be using for the decorating you want to do. These items can be bought at craft stores and cake decorating supply store.
To start with, choose the tip you will be using first. Hold the pastry bag with the hole down and place the tip inside, as far as possible. You should use about a cup of icing in the bag at a time, and start it out in a bowl, that way you can thin the icing with a little milk if you need to, before you put it in the icing bag. The icing should be thin enough to go through the tip, but thick enough to make the designs you choose. If you are still a novice at cake decorating, you should practice making the decorations on waxed paper before you attempt to put them on the cake. Be sure not to practice tasting your frosting too often, or you will be like me and have to start looking for one of those medifast coupons to help take off the extra pounds my efforts have put on.
When you are ready to ice the cake, you will need to hold the bag with both hands and apply steady pressure. Applying a steady pressure assures that the icing the icing will come out in an even strip. Unless you are making a long strip of piping, you should place the bag closely over the cake start squeezing and count to three, then stop squeezing and lift the tip up and away from the cake. If this decoration looks the way you want it to, move on to the next one, if it isn’t quite right, keep practicing until you get it. If the cake decoration stays in the shape you intended, then you have the frosting at the right consistency. If it does not hold together, the icing is too thin, and if it was hard to push it through the tip or the cake decoration cracks, the frosting is too thick.
You can get a list of the equipment needed for cake decorating before you start. The list can be found in craft store or pastry supply. The basics are Several pastry bags, icing tips, a coupler to hold the tips in the bag. You will find a cake stand would be a big help, as it swivels so you can frost all sides of the cake, and bring the cake up and closer to you. You should also have several sizes of cake pans, a rubber spatula, a short and a long metal cake icing spatula, a sharp knife, and a baking tray. These are the essentials.
Although cake decorating can be frustrating at times, it can also be very rewarding when you realize the beautiful cake on that stand is something that you created. With a bit of patience and a can do attitude, you will become and accomplished cake decorator.

Fondant to keep it pretty moist while you’re working with it. Gum paste dries hard once it has some time to dry. A little bit of cornstarch to keep it from sticking to the table. And for this we want to roll it pretty thin, that will make the flower petals more realistic. So now we have it rolled out, it’s pretty thin, that way it will look more realistic once we get it punched out. So we have 4 different sizes of this flower cutter, and that will allow us to get the 4 different layers to really make it frilly. So we’ll start with the big one. We’ll have the big one and then one of each. And then now we want to frill the edges, because right now we have this cut flat edge and it’s really not very exciting once it’s stacked up. So we want to have this tool. It’s graduated and it comes to a point on the end. And that’s the end we want to use to frill the edges. So we just want to roll it back and forth. And it will kind of flatten and ruffle the edges to make it more realistic, more like a real flower petal. So you just want to hold it in one spot. Give it a couple …

One for butter cream and one for fondant. Butter cream tools are used to shape the butter cream and push it around, move it around, squeeze it out. This is an offset spreader. That’ll help you spread around the butter cream in small detail, scoop up roses and put them on a cake. This is a piping bag. If you’re filling it, you want to turn it inside out and that way, you can hold it with one hand, use the other hand to scoop the frosting, put it inside. If you want to use the tips, you can easily change them out if you put in a coupler first.

And the head you just want to pinch off another size ball, and before you start shaping it, just make sure it’s the right size. You’d rather have it too big than too small. Then just fold it around so that all the wrinkles of the fondant are underneath, rather than right in the center of the face. So I’m just going to pick the best side for my face. So for the face, we’re going to do it like he’s sleeping so we’ll create just some eyelids, rather than drawing the whole eye. So we have a tip, imprint it only half of the circle, and it’ll be like he’s sleeping, and then we just want to give him a little tiny, the tiniest piece, into a little ball for his nose. And just a little bit of glue where it’s going to go, and then for the mouth, we’ll use a smaller sized tip, kinda like he might be snoring his mouth is open, and we’ll do that right underneath where the nose is going to go. And then we’ll cover him with a blanket of fondant, just make sure it’s the same thickness all the way around, and you want to use your pizza cutter to wheel out the right size.
